Don't be fooled by the name - this legume and cereal soup is ideal for any season! In winter soups and summer salads! Rinse the product well before using it and carry out a visual check. Meanwhile, pour cold water (or vegetable broth) into a saucepan and bring it to a boil. As soon as the water boils, add salt, pour the soup and lower the heat; if necessary, add hot water during cooking. Cook over medium heat for about 30/40 minutes, or longer depending on the desired consistency. Once ready, serve the barley and legume soup with a drizzle of extra virgin olive oil and delicious croutons.
