Not just a simple legume and cereal soup!
The fantasy of grains and legumes is obviously ideal as a soup, but drained and left to cool it also lends itself as a salad to be enjoyed whenever and wherever you want, from lunch break to a light meal at the beach - maybe adding some finishing touches like some fresh vegetables!
It doesn't need any soaking: rinse it well and do a visual check. In the meantime, pour cold water (or alternatively vegetable broth) into a pot and bring it to a boil. As soon as the water boils, add a little bit of salt, pour in the product and lower the heat; if necessary, add hot water during cooking. Add herbs or spices to taste. Cook over medium heat for about 10 minutes, or longer depending on desired consistency. When ready add with a drizzle of extra virgin olive oil and some delicious croutons.
