Pea hummus

Fresh and light, this pea hummus is perfect for your summer aperitifs. A recipe that will satisfy the palates of your most demanding friends, even vegans!

INGREDIENTS

250 gr of Colfiorito® Split Peas
50 gr of Colfiorito® Sesame Seeds
25 gr of Colfiorito® Sunflower Seeds
Juice of one lemon
1 clove of garlic
5/6 mint leaves

PREPARATION

After rinsing the peas, boil them in plenty of water for about 35/40 minutes until they reach a rather soft consistency. Drain them and set them aside to cool. In a mixer, chop the sesame and sunflower seeds, then add the chopped garlic, mint leaves and peas. Once everything is blended, add the lemon juice and the extra virgin olive oil until you get a creamy but not too liquid mixture. Season with salt and leave to rest in the refrigerator for at least half an hour.
Serve the hummus with whole grain crackers. It will be perfect for your summer lunches or for an aperitif with friends!
