1. Boil the Borlotti beans, which have been soaked for about an hour, over low heat, adding salt only at the end of cooking. Then drain them well.
2. Preheat the oven to 350°F. Meanwhile, heat the olive oil in a pan and add the chopped onion, garlic, carrot, and celery and cook until soft.
3. In a bowl, mash the beans with a fork until you get a coarse consistency. Then add the vegetables, paprika, oregano, breadcrumbs, salt, and pepper, and mix until you get a compact mixture.
4. Shape the mixture into a loaf and place it on a baking sheet, then bake for 30-35 minutes until golden brown. Allow to cool before slicing.
