250 g Colfiorito black lentils, already boiled
120 g green peppers
20 g red onion
20 g fresh cilantro
5 g fresh chili peppers
8 cherry tomatoes
Extra virgin olive oil to taste
Salt and pepper to taste
Apple vinegar to taste
Slice the onion and soak it in apple cider vinegar for 5 minutes, then drain.
Dice the peppers and cherry tomatoes very small.
Chop together the washed and dried cilantro, sliced onion and fresh chili pepper.
Add the bell bell pepper, cherry tomatoes and the resulting mince to the lentils and season with oil, salt and pepper.
