Lentil, mushroom and carrot salad

For a perfect post-workout meal, the lentil, mushroom and carrot salad is ideal for recharging your energy. A real goodness!

INGREDIENTS

Lentils Colfiorito 200g
Mushrooms 100 g
Carrots 100 g
Extra virgin olive oil 50 g
Salt to taste
Black pepper to taste

PREPARATION

First, rinse the lentils to remove any impurities. Pour water into a saucepan and as soon as it comes to a boil, cook the lentils for 30 minutes. Season with salt only at the end and, when cooked, drain and leave to cool. Take care of the other ingredients. Clean the mushrooms well, cut them into slices and cook them in a pot with hot oil until they are soft. Finally, slice the carrot into sticks after you have peeled and popped it.

Combine all the ingredients and enjoy your salad.
