200 g of Colfiorito® lentils
1 spring onions
30 g of olives
2 tablespoons of oil
A simple and delicious recipe, to prepared all year round!
Put a pot of water (or vegetable broth) on the heat, once brought to a boil pour in some salt and immediately afterwards the lentils. Let it cook for about 20 minutes and as soon as it reaches the desired consistency, drain it and recover the cooking liquid. Let it cool down.
Meanwhile, cut the spring onions, them cucumbers and the peppers into cubes.
In a bowl, mix all the ingredients, add the olives and season everything with the oil and 2-3 tablespoons of the lentil cooking liquid. Season with salt, pepper and parsley.
Tasty to bring to the table and ideal to be consumed on a break at work.
